Ingredients
  

For the Glaze
  • 1 cup Apricot Preserves or peach preserves for a twist
  • 2 tablespoons Red Wine Vinegar can substitute with white wine vinegar
  • 1.5 tablespoons Olive Oil can be replaced with canola or avocado oil
  • 2 cloves Garlic (minced) can use garlic powder as a substitute
For the Chicken
  • 4 pieces Boneless, Skinless Chicken Thighs chicken breasts can be used, adjust cooking time accordingly
  • to taste Sea Salt adjust to personal preference
  • to taste Freshly Cracked Pepper adjust to personal preference
For Cooking
  • 1 tablespoon Cooking Oil to brown the chicken

Method
 

Preparation
  1. In a mixing bowl, combine the apricot preserves, red wine vinegar, olive oil, and minced garlic. Whisk until smooth.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. Season both sides of the chicken thighs with sea salt and freshly cracked pepper.
  4. Heat cooking oil in a skillet over medium-high heat. Add chicken and brown for 4 minutes on each side.
  5. Flip chicken, pour the glaze over it, coating each piece.
  6. Transfer skillet to the preheated oven and bake for 8–10 minutes until chicken reaches an internal temperature of 165 degrees Fahrenheit.
  7. Remove from oven, let rest for a few minutes, then serve warm with veggies or rice.
