- In a mixing bowl, combine the apricot preserves, red wine vinegar, olive oil, and minced garlic. Whisk until smooth.
- Preheat the oven to 350 degrees Fahrenheit.
- Season both sides of the chicken thighs with sea salt and freshly cracked pepper.
- Heat cooking oil in a skillet over medium-high heat. Add chicken and brown for 4 minutes on each side.
- Flip chicken, pour the glaze over it, coating each piece.
- Transfer skillet to the preheated oven and bake for 8–10 minutes until chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Remove from oven, let rest for a few minutes, then serve warm with veggies or rice.
