Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Gather your ingredients while the oven warms up.
  2. Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Roast for 25-30 minutes until golden brown.
  3. Cook the ground beef in a skillet over medium heat for 6-8 minutes, then add taco seasoning and a splash of water. Simmer for 2-3 minutes.
  4. Prepare the pico de gallo by mixing diced tomatoes, onion, cilantro, jalapeño, and lime juice. Let sit for a few minutes.
  5. Assemble the bowls with roasted sweet potatoes, ground beef, pico de gallo, guacamole, and sour cream. Garnish as desired.
