Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Soak the soft dates in warm water for 10–15 minutes until soft.
  3. Blend the soaked dates into a smooth paste.
  4. In a mixing bowl, combine peanut butter, blended dates, oats, baking soda, and vanilla extract.
  5. Scoop and roll dough into balls; place on a parchment-lined baking sheet.
  6. Flatten each cookie slightly with your fingers or the back of a spoon.
  7. Bake for 10–15 minutes until edges are golden and centers are soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
