Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash the medium Russet potatoes under cool water.
  2. Poke several holes in each potato using a fork. Wrap them tightly in aluminum foil and place them directly on the oven rack. Bake for about 1 hour until tender.
  3. Heat a skillet over medium-high heat and add the lean ground beef. Cook for 6-8 minutes, breaking it apart as it browns. Drain any excess fat.
  4. Sprinkle in your taco seasoning and add about 1/2 cup of water. Let the mixture simmer on low for around 10 minutes.
  5. Once potatoes are done, unwrap them carefully. Slice a lengthwise slit across the top of each potato and fluff the interior with a fork. Spoon the seasoned beef into each potato.
  6. Top with shredded lettuce, cheddar cheese, sour cream, salsa, and any other toppings. Serve immediately and enjoy!
