  • 1 cup lettuce or spinach, kale for richer nutrients
  • 1 medium red onion or green onions as a milder substitute
  • 1/4 cup banana peppers or sliced dill pickles for similar acidity
For the Dressing
  • 1/2 cup mayonnaise or Greek yogurt for tanginess
  • 2 tablespoons red grape juice vinegar or white wine vinegar
  • 1 teaspoon Italian seasoning or mix dried oregano, basil, thyme
  • 1 teaspoon cracked pepper or regular ground black pepper

Method
 

Preparation
  1. In a mixing bowl, combine softened butter with parmesan cheese and garlic powder. Mix until smooth and creamy for the butter spread.
  2. Take two slices of bread, spread the butter mixture on one side. Layer turkey meats, followed by a generous helping of cheese.
  3. Cover with the second slice of bread, buttered side facing out.
  4. Preheat a nonstick skillet over low heat and toast the sandwich for 5-6 minutes until golden brown, pressing down gently.
  5. Meanwhile, mix mayonnaise, red grape juice vinegar, remaining parmesan, garlic powder, Italian seasoning, and cracked pepper for the dressing.
  6. Fold lettuce, red onions, and banana peppers into the dressing. Set aside.
  7. Once toasted, slice the sandwich in half, load it with the dressed veggie mixture, and serve immediately.
