  • 1 medium Butternut Squash cubed
  • 3 medium Gala Apples sliced
  • 1 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract or imitation
  • 1/4 cup Brown Sugar or Honey or maple syrup
  • 2 tbsp Butter or coconut oil for dairy-free
  • 1 pinch Salt
  • 1 pinch Black Pepper
For the Add-Ins
  • 1/2 cup Golden Raisins
  • 1/2 cup Dried Cranberries
  • 1/2 cup Pecans or Walnuts chopped

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a spacious mixing bowl, combine the butternut squash cubes, sliced gala apples, ground cinnamon, vanilla extract, and brown sugar or honey. Toss gently until coated.
  3. Transfer the mixture into a lidded baking dish, spreading evenly. Add small pieces of butter on top and cover tightly. Bake for 15 minutes.
  4. Remove from oven, uncover, and add golden raisins, dried cranberries, and chopped pecans or walnuts. Toss to combine.
  5. Cover and return to the oven for an additional 15 minutes until squash is tender.
  6. Remove from the oven, stir gently, and serve warm.
