Ingredients
  

  • 500 g Large Raw Prawns Shrimp can be a substitute.
  • 250 g Vine Tomatoes Any ripe tomatoes work.
  • 1 Tbsp Lemon Zest
  • 1 Tbsp Lemon Juice Lime can offer a fun twist.
  • 2 Tbsp Olive Oil Avocado oil is a good swap.
  • 2 cloves Garlic (Crushed) Adjust for preferred intensity.
  • 1 tsp Chilli Flakes Omit for milder version.
  • 1 tsp Dried Oregano Thyme can serve as an alternative.
  • 1 tsp Sea Salt Adjust to taste.
  • 1 tsp Ground Pepper Adjust to taste.
  • 150 g Firm Feta Cheese Goat cheese is a substitute.
  • 2 Tbsp Chopped Parsley Add freshness and color.

Method
 

  1. Preheat your oven to 200°C (fan bake).
  2. In a large mixing bowl, combine prawns, tomatoes, lemon zest, lemon juice, olive oil, crushed garlic, chili flakes, oregano, sea salt, and ground pepper. Toss well.
  3. Transfer the mixture into a medium-sized ovenproof dish and spread evenly.
  4. Break the feta cheese into large pieces and nestle among the prawns and tomatoes. Spoon marinade over the feta.
  5. Bake in the preheated oven for 15 minutes or until prawns are pink and opaque.
  6. Remove from oven and garnish with chopped parsley. Serve immediately, optionally with crusty bread.
