- Preheat your oven to 200°C (fan bake).
- In a large mixing bowl, combine prawns, tomatoes, lemon zest, lemon juice, olive oil, crushed garlic, chili flakes, oregano, sea salt, and ground pepper. Toss well.
- Transfer the mixture into a medium-sized ovenproof dish and spread evenly.
- Break the feta cheese into large pieces and nestle among the prawns and tomatoes. Spoon marinade over the feta.
- Bake in the preheated oven for 15 minutes or until prawns are pink and opaque.
- Remove from oven and garnish with chopped parsley. Serve immediately, optionally with crusty bread.
