Ingredients
  

For the Salad
  • 8 ounces Pasta (cavatelli or penne)
  • 1 cup Cherry Tomatoes (halved)
  • 8 ounces Fresh Mozzarella (diced) can substitute with feta
  • 1/2 medium Red Onion (diced) can substitute with green onions
  • 1/2 cup Pepperoncini optional
  • 1/4 cup Parsley (chopped) can substitute with arugula or basil
For the Pesto
  • 2 cups Basil can substitute with spinach or arugula
  • 1/2 cup Olive Oil can substitute with avocado oil
  • 1/3 cup Pine Nuts can substitute with walnuts or sunflower seeds
  • 1/2 cup Parmesan Cheese (grated) can substitute with nutritional yeast
  • 2 tablespoons Lemon Juice can substitute with extra vinegar
  • 2 cloves Garlic (minced) can substitute with garlic powder
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper

Method
 

Cooking Instructions
  1. In a large pot, bring salted water to a rolling boil and add your chosen pasta. Cook according to package instructions until al dente, then drain and rinse under cold water.
  2. In a food processor, combine basil, pine nuts, Parmesan cheese, garlic, lemon juice, olive oil, sea salt, and black pepper. Blend until smooth and creamy, about 30-60 seconds.
  3. In a large mixing bowl, combine the cooked pasta with the pesto, cherry tomatoes, mozzarella, pepperoncini, and parsley. Toss until well-coated.
  4. Taste and adjust seasoning if necessary, then cover and refrigerate for at least 15-20 minutes.
  5. Serve the salad cold, tossing gently before serving and adding more olive oil or cheese if desired.
