Step-by-Step Instructions for Zucchini Lasagna with Ground Turkey
  1. Preheat your oven to 375°F (190°C). Slice zucchinis into thin strips and sprinkle with salt. Let sit for 15-20 minutes to draw out moisture.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 4-5 minutes. Then, add minced garlic and ground turkey, cooking until browned.
  3. Stir in crushed tomatoes and Italian seasoning. Simmer for 10 minutes.
  4. In a medium bowl, combine ricotta cheese, a beaten egg (optional), and a pinch of salt. Mix until creamy.
  5. In a baking dish, spread a thin layer of meat sauce, followed by zucchini noodles, half of the ricotta mixture, and mozzarella cheese. Repeat and finish with sauce and remaining mozzarella and parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15-20 minutes until cheese is golden.
  7. Let rest for 10-15 minutes before slicing. Garnish with fresh basil if desired.
