For the Pasta Salad
  • 8 oz Rotini Pasta Cooked al dente
  • 1 lb Ground Beef Seasoned with taco seasoning
  • 2 tbsp Taco Seasoning Boosts flavor
  • 1 cup Cherry Tomatoes Halved
  • 1/2 cup Green Onions Sliced
  • 1 cup Shredded Cheese (Cheddar + Monterey Jack Blend) Adds creaminess
  • 1/2 cup Catalina Dressing Tangy moisture
  • 2 cups Doritos (Crushed) For crunch

Equipment

  • Large pot
  • large skillet
  • mixing bowl

Method

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Add in the rotini pasta and cook until al dente, about 8-10 minutes. Drain the pasta and rinse under cold water.
  2. In a large skillet over medium-high heat, add the ground beef and cook until no longer pink, about 5-7 minutes. Drain excess fat and stir in taco seasoning.
  3. In a big mixing bowl, combine the cooked rotini pasta, seasoned ground beef, cherry tomatoes, green onions, and shredded cheese, folding gently to mix.
  4. Pour the Catalina dressing over the mixture and stir until well combined.
  5. If time allows, chill in the refrigerator for about 15 minutes; otherwise, serve immediately.
  6. Just before serving, fold in the crushed Doritos for crunch.
